The purpose of a firming agent is to precipitate residual pectin during processing, strengthening the structure of the food and preventing it from collapsing.

The food grade calcium chloride is used as a firming agent with European food additive number E509. It is mainly used for fruits and vegetables.In canned foods calcium chloride is used as a firming agent.  Like, firm soybean curds into tofu, and produce a caviar substitute from vegetable or fruit juices.
